Surprise – today we're bringing you two delicious recipes in one! Greek chicken, AND mediterranean couscous with greek chicken (don't worry, the couscous is delicious with or without the chicken).
Greek Chicken
Ingredients
- Chicken breast
- Garlic powder
- Paprika
- Rosemary
- 1 lemon
- Fresh parsley, chopped
- Olive Tree 5 Pepper Sea Salt
- ½ cup Olive Tree Greek Seasoning Olive Oil
- ½ cup Olive Tree White Lemon Balsamic
Instructions
- Trim chicken (if needed)
- Make marinade
- Combine olive oil and vinegar
- Zest 1 lemon into the mixture
- Squeeze ½ of a fresh lemon into the mixture
- Add ½ teaspoons of fresh chopped parsley
- Add ¼ - ½ teaspoon of salt
- Pour marinade over chicken, and chill for 1 hour
- Grill chicken
- Serve as desired
Mediterranean Couscous with Greek Chicken
Ingredients
- Greek chicken (see above)
- 4 cups Israeli couscous, cooked
- Sliced almonds
- 1 zucchini, sliced
- 1 summer squash, sliced
- Grape tomatoes, halved
- 2 cloves of garlic, minced
- 1 tsp rosemary
- ½ tsp thyme
- Fresh parsley
- 4 cups veggie or chicken stock
- ½ tsp Olive Tree 5 Pepper Sea Salt
- ½ cup Olive Tree Greek Seasoning Olive Oil
- ½ cup Olive Tree White Lemon Balsamic
Instructions
- Prepare Greek Chicken (see above)
- Slice zucchini and summer squash, cut slices in quarters
- Halve grape tomatoes
- Add zucchini, summer squash, tomatoes, and garlic to baking sheet
- Drizzle Greek Seasoning Olive Oil overtop
- Add 5 Pepper Sea Salt, rosemary, thyme
- Mix until all veggies are coated in olive oil and seasoning
- Bake at 350° for 15 minutes
- Prepare Israeli couscous according to package instructions, substituting chicken or veggie stock for water
- Toast sliced almonds
- Add 1 tbsp butter and juice from ¼ of a lemon to couscous
- Season cooked couscous with garlic powder, parsley and 5 Pepper Sea Salt
- Add Israeli couscous to plate, top with veggies and sliced chicken
- Top with goat cheese
- Serve!
