Blackberry Citrus Chimichurri-Marinated Pork

In this recipe, we're bringing you the perfect summer pork – mouthwatering, fruity, juicy, and something you'll definitely want to prepare time and time again. 



  1. Combine all marinade ingredients and whisk together. 
  2. For pork:
    1. Trim pork fat and remove silverskin 
    2. Season meat with 5 Pepper Sea Salt 
    3. Add pork to plastic bag
    4. Pour marinade over pork, covering entire tenderloin
    5. Add ½ of a thinly sliced shallot 
    6. Add fresh squeezed juice of ½ lime
    7. Mix in bag to distribute marinade and onions
    8. Marinate in fridge for 1 hour
    9. Sear pork in pan with olive oil on medium-high until balsamic forms dark caramelization
  3. For sauce:
    1. Over medium-low heat, melt 1 tbsp. Butter
    2. Drop in ½ of thinly sliced shallot and 2 cloves of thinly sliced garlic, and let sweat
    3. Add ¼ cup Blackberry Balsamic Vinegar, a large pinch of fresh lime zest, ½ container of chopped blackberries, juice of ½ fresh lime, and pinch of 5 Pepper Sea Salt – let reduce over low heat until berries are mostly broken down
    4. Remove from heat when mixture reaches your desired consistency 
  4. To finish:
    1. Slice cooked pork, arrange on plate, and top with sauce
    2. Add additional seasonings or garnishes as desired
    3. Serve!
