In this recipe, we're bringing you the perfect summer pork – mouthwatering, fruity, juicy, and something you'll definitely want to prepare time and time again.
Ingredients:
- For marinade:
- ½ cup Blackberry Balsamic
- ½ cup Persian Lime Olive Oil
- ½ tsp. 5 Pepper Sea Salt
- 2 cloves minced garlic
- 1 ½ tsp. fresh chopped parsley
- ¾ tsp. fresh chopped mint
- ½ tsp. lime zest
- For pork:
- 1-2 lb. pork tenderloin
- 5 Pepper Sea Salt
- ½ of a thinly sliced shallot
- Fresh squeezed juice of ½ lime
- For sauce:
- 1 tbsp. Butter
- ½ thinly sliced shallot
- 2 cloves thinly sliced garlic
- ¼ cup Blackberry Balsamic Vinegar
- Pinch 5 Pepper Sea Salt
- Lime zest
- ½ container of blackberries
- Juice from ½ fresh lime
Instructions:
- Combine all marinade ingredients and whisk together.
- For pork:
- Trim pork fat and remove silverskin
- Season meat with 5 Pepper Sea Salt
- Add pork to plastic bag
- Pour marinade over pork, covering entire tenderloin
- Add ½ of a thinly sliced shallot
- Add fresh squeezed juice of ½ lime
- Mix in bag to distribute marinade and onions
- Marinate in fridge for 1 hour
- Sear pork in pan with olive oil on medium-high until balsamic forms dark caramelization
- For sauce:
- Over medium-low heat, melt 1 tbsp. Butter
- Drop in ½ of thinly sliced shallot and 2 cloves of thinly sliced garlic, and let sweat
- Add ¼ cup Blackberry Balsamic Vinegar, a large pinch of fresh lime zest, ½ container of chopped blackberries, juice of ½ fresh lime, and pinch of 5 Pepper Sea Salt – let reduce over low heat until berries are mostly broken down
- Remove from heat when mixture reaches your desired consistency
- To finish:
- Slice cooked pork, arrange on plate, and top with sauce
- Add additional seasonings or garnishes as desired
- Serve!
