This Rustic Tomato and Olive Tapenade is perfect served over fish, chicken, pasta, and bruschetta.

- 1 pound fresh tomatoes, chopped
- 2 whole peeled cloves garlic, chopped
- 1/2 cup coarsely chopped black olives
- 1/8 cup extra virgin olive oil (Olive Tree Blend Olive Oil preferred)
- drizzle of balsamic vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1-2 teaspoons fresh oregano, or 1/2 teaspoon dried oregano
- Pinch of pepper flakes
- Combine all ingredients.
