Join Raven in the Olive Tree Virtual Kitchen for a culinary trip along the Po River of Northern Italy. We will be cooking recipes from the Bike and Barge Cookbook and talking about the delicious culinary traditions of this lush agricultural region. Aperol Spritzers will welcome us to class and anchor us to Italy! We will start our journey with a simple Zuppa di Carote, Feta e Paprika, a Carrot Soup scented with Paprika and garnished with Feta. For our Primi Course, we will make classic northern style Lasanga di Porri e Pancetta, a Leek and Pancetta Lasagna complete with homemade noodles and creamy bechamel and liberal amounts of Grana Padano cheese native to the region. Secondi Cozze e Vongole alla Marinara, Clams and Mussels, contrary to the American idea of marinara, or the Mariners sauce, this is a simple tomato-less version. Dolci will be our last stop on the journey, the Italian Classic, Tiramisu, the coffee soaked Lady Finger dessert, layered in rich mascrapone custard. Let's travel with our taste buds, and enjoy the food of Italy!
