Having a few great vegetarian recipes is essential for any home chef, and during these strange times of strained budgets and a meat industry that is facing some challenges, is a perfect time to learn a few new dishes! Being raised vegetarian, I have always loved vegetarian food, it is my comfort food, so join me on a trip around the world exploring great meatless dishes! We will start with Tofu Mushroom Stroganoff, that has a fried tofu recipe that has converted many a meat eater! Next we are off to Greece for the flaky goodness of Spanokopita, perfect for Spring Spinach. Next off a street foo staple from around the world, Falafel made from soaked chickpeas. The last stop will be India, where we will indulge in Vegetable Pakoras, a gluten free fritter made from chickpea flour served with a cilantro-mint chutney, that is hearty and delicious!
